Ingredients
* 2 cups of flour, plus extra for kneading
* 220g cold unsalted butter, diced
* 1 tsp vinegar
* 50ml sour cream
* 1 tsp sea salt
* 1 egg yolk
* 350-400g ricotta
* 5 tomatoes of your choice
Method
Combine the flour and salt in a large bowl. Add the diced butter and, using your fingers, mix together.
Whisk together the vinegar and sour cream in a small bowl, then add it to the flour-butter mixture.
Dust your hands with extra flour, then combine the mixture by kneading it slightly. Shape the mixture into a ball, dust it with extra flour, then cover it in cling wrap and rest it in the fridge for one hour.
Once rested, remove the dough and knead for 1 minute on a lightly floured surface. Roll it out into a round shape and place onto a baking tray lined with baking paper.
Preheat the oven to 180 degrees.
Season the ricotta with salt, then spread the ricotta over the centre of the dough surface, up to 2 cm from the edge of the rolled out dough. Slice the tomatoes thinly and arrange them on top of the ricotta so they are overlapping slightly. Season with salt. Fold over the edges of the pastry, then brush with whisked egg yolk.
Place the tray into the oven and bake for up to 1 hour or until golden and cooked through. Enjoy!
