Our third coffee offering from our friends at Finca El Diviso this harvest is a washed red borbón with an anaerobic fermentation. By removing oxygen from the equation, the coffee is processed in a more controlled environment, allowing for a more complex cup profile. Jonathan Delgado and his family, third generation coffee farmers, have mastered these experimental fermentation techniques and consistently produce stellar coffees with unique profiles.
El Diviso Rojo is a stunning example of the borbón variety that is known for its sweetness, with notes of poached pear, brown sugar and spices like cinnamon and clove.
