Meet Zen, roaster in-training and a member of the production team. Before exploring this side of coffee, Zen was a barista and store lead at our flagship Williamsburg shop. While working on the floor, they knew they wanted to deep dive into the world of roasting and the flavor profiling of coffee. They started grabbing any opportunity to cup and shadowing the head roaster to learn the principles of roasting. With a pastry chef and recipe development background, Zen has always been interested in understanding flavors and learning how to manipulate them to produce the ideal flavor.
Zen is working towards becoming a certified Q grader, and eventually a Master Roaster. In the meantime, their favorite part of the job is the permeating aroma of the freshly roasted coffee when packaging orders, especially Mirolindo, their current favorite limited edition.
