Behind the Bar with Edwin Daza: This month we highlight Edwin Daza, a lab assistant in coffee quality at Devoción’s Bogotá office. A key member of the quality control team, Daza works in our laboratory analyzing, roasting and cupping all the coffee samples that enter the plant. His work is key to understanding the hundreds of exploratory samples we get from producers all over Colombia each year, including their tasting notes, level of defects and overall cupping score.
Starting from the packaging department and making his way to the laboratory is a source of pride for Daza, and his continued studies have refined his coffee expertise tremendously as he works toward his goal of moving abroad and becoming a master roaster.
Daza’s signature drink is called ‘Summer in Bogotá’, a sweet, fruity and energizing warm weather drink that he made to capture the essence of a sunny Bogotá day.
Summer in Bogotá Signature Drink
Ingredients:
210 mL Toro cold brew
30 g of ice
30 g of sweetened condensed milk
30 g of blueberries
Mix all ingredients in a blender and blend on high speed for 30 seconds. Serve and top with fresh blueberries.
