Our Bogotá-based head of Technical Service, Christian Lopez, has been with Devoción for 6 years. Starting as a barista, he’s risen through the ranks to become a well-rounded coffee professional who could just as easily pour you the perfect latte as open up your espresso machine and fix a faulty boiler. For this month’s installment of our Behind the Bar series, Lopez has chosen an affogato for its combination of cold and hot. He likes the way the ice cream starts out as a solid, then slowly melts into a liquid from the heat of the coffee—a drinkable concoction that is rich, sweet and acidic at the same time. “I wanted to show a little bit more of what we do in Colombia other than just espressos and manual brews,” says Lopez, “and also to maybe encourage people to start playing with coffee recipes at home.” Affogato You will need - Moka Pot - Devoción El Sol - Vanilla Ice Cream - Gibraltar - Spoon Recipe 1️⃣ Fill the bottom chamber of the moka pot with water just below the steam valve. Fill the basket with finely ground coffee, evenly distributed. 2️⃣ Screw the top on and place on the stove on a medium-low flame. When you hear a hissing, gurgling sound, turn off the flame and your coffee is ready! 3️⃣ Serve over a scoop of ice cream and enjoy!
