🎶 Behind the Bar: Meet Cole Reyes. Cole has been working behind the bar at our flagship Williamsburg café and roastery since August last year, although he has 4 years of specialty coffee experience under his belt.
Outside the café, Cole is a contemporary classic composer, and enjoys singing and playing the piano.
Now a seasoned barista, Cole wasn't always an expert in latte art. He started out practicing at home, watching YouTube tutorials and playing around with homemade espresso and milk frothing techniques. His favorite drink is a classic cappuccino.
Cole's Homemade Aeropress Cappuccino
Ingredients:
20 grams Devoción Honey coffee, finely ground
80 mL water
160 mL milk
Method:
Using an Aeropress, brew concentrated coffee. Add the coffee to the chamber. Pour half of the water and bloom for 30 seconds. Then add the rest of the water and stir. Press through the filter.
Heat up the milk in the microwave until it reaches a temperature of 140º F.
Transfer the milk into a clean French press and plunge it several times to froth it until you reach the desired milk texture. Using a pitcher, pour the textured milk into the concentrated coffee and serve.
