Just realized I forgot to share my little chia seed pudding recipe from my vlog 🥰 I had these really good chia cups with PB on the bottom while I was in Miami, and I’ve been trying to recreate it ever since. It’s really easy, and as long as you’re okay with texture, try it out for a little mid day snack:
- In a Mason jar, combine 2 TBS of chia seeds w 1/4 cup of milk. You can use any kind! I usually use oat milk or coconut milk for chia seed pudding.
- 1 TBS honey (or maple syrup!)
- 1/2 tsp vanilla extract
- I like to add cinnamon to mine, but this is totally optional
Add everything to a mason jar and stir well. You may have to remove from the fridge after an hour or so and re-stir if you notice it’s separating! Let the jar sit in the fridge for 4-6 hours (overnight is best) and then when it’s a thick/pudding consistency, take it out and add your toppings!
I’ve been layering the jars with peanut butter at the bottom, then adding in strawberries, sliced banana, a bit more honey and granola (Trader Joe’s pb protein granola 🤌🏻) and it’s been the perfect snack!
