🍌Banana Cream Pie Chia Pudding
- Serves 3-4 chia pudding cups -
😍INGREDIENTS:
3/4 cup organic chia seeds
1 1/2 cups organic, full-fat coconut milk, canned
9oz (1 cup + 2 Tbsp) almond milk
1 Tbsp of vanilla extract
1-2 Tbsp raw, local honey
A pinch of Himalayan pink salt
1-2 bananas for slicing
Organic, pasture-raised whipped cream for topping
A dash of nutmeg and ground cinnamon
INSTRUCTIONS:
1️⃣In a medium-sized mixing bowl, whisk together your milks, vanilla, honey and salt. Next, whisk in your chia seeds, and continue to whisk for about a minute or two to prevent them from clumping.
2️⃣Once the seeds have thickened in the milk, cover them, and let them chill in the fridge until thick and pudding-like. This'll be about 3 or so hours, depending on which milk you use. Overnight is best and definitely recommended!
3️⃣Once your pudding has thickened, it's time to assemble! Beat your organic whipped cream with a dash of vanilla, honey, salt and both spices. Whip that until it becomes whipped cream! Next, slice up as many banana slices as you'd like.
4️⃣Assemble this deliciousness by doing a layer of chia pudding, then whipped cream, then the banana slices. Continue this until your pudding cup is full! Top with a pinch of dark chocolate shavings and DIG IN!
