5 delicious ways to cook leeks š±

1) ROASTED
Leeks are delicious in pie, crumble and gratin recipes. Chop the leeks, toss them in olive oil and add them to your roast recipes. To roast them on their own, place them on a single layer on a baking tray, season with salt and pepper (paprika works well too) and roast at 180C for 20 minutes, until lightly charred.
2) BRAISED
Trim the tops and roots from the leeks to create a clean, solid middle section. Place the leeks next to each other on a large piece of foil and fold up the edges to form an open parcel. Add butter, garlic and seasoning to the leeks, then pour over vegetable stock (great recipe to use the discarded green parts). Bring the foil together to form a tight parcel, sealing in the leeks and liquid. Place on a baking tray and cook at 160C for 30 minutes, or until the leeks are completely tender.
3) BLANCHED
Cook the leeks in boiling water for 10-15 minutes. Check the leeks are tender by inserting a small, sharp knife through the centre then remove from the water and place on a clean tea towel to drain. This recipe is great for āleek vinaigretteā. Place the blanched leeks on a serving plate and cover with a dressing made from shallot, vinegar, mustard, olive oil, salt and pepper.
4) SAUTEED
Add chopped leeks in a pan with olive oil. Season to taste and cook until tender and crispy on the outside. You can add double cream to make a lovely sauce or serve them like that. Sauteed leeks are simple and quick to make and are a great addition to lots of recipes.
5) GRILLED
To grill your leeks you need to start by blanching them 5 minutes in boiling water. Then, transfer the leeks to a dish and drizzle with olive oil. Sprinkle with salt and pepper. When your grill is hot, add the leeks. Grill over medium-high heat for 2 minutes, then flip and grill for another 2 minutes.
