Need some culinary inspiration for your fresh broccoli this week? Here's 6 delicious ways you can enjoy your green florets, courtesy of our guest ODDBOX chef, Storm (@whatstormeats): GRATIN: Smothered in a gorgeously garlicky and cheesy sauce – what is not to love? Sauté sliced onions in a little butter until translucent. Make a roux with flour and butter, and add milk to form a thick sauce. Add in your favourite cheese and pour over lightly steamed broccoli. Finish with leftover breadcrumbs and plenty of black pepper. CROQUETTES: Combine mash potato with cooked broccoli, a strong cheese (like gruyere and parmesan) and an egg. Season well before forming into rough cylindrical shapes. Dip into flour, egg and then finally breadcrumbs before frying until golden brown. Serve with a spicy tomato dip and lashings of parmesan! STIR FRY: Add garlic, ginger and chilli in a little sesame oil in a wok and add cubes of tofu and florets of raw broccoli. Add a stir fry sauce of soy sauce, honey and a little cornflour and add to the veg. Cook on a high heat until the broccoli is cooked through but still crunchy. Finish with a little fresh spring onion and sesame seeds and serve on white rice. ROAST: A great side dish or starter - roast a whole head of broccoli in the oven with olive oil, crushed garlic and sea salt. Serve with a zesty Italian-style salsa verde made with fresh herbs (parsley, basil and chives work well!), garlic, capers and olive oil. PIE: Perfect for when the weather turns a little colder! Fry off leeks and garlic in a little butter until cooked through. Add cubed potatoes, some vegetable stock and milk. Stir through Dijon mustard, and cook until the potatoes are soft. Add broccoli florets and pour the mixture into a pie dish. Crumble over blue cheese and top with filo or puff pastry. Brush with egg or milk and bake until golden brown. ENCHILADAS: Stuff tortillas with cooked black beans, broccoli and chipotle paste. Roll and place side by side in an oven dish and smother in a smoky tomato sauce and finish with cheese. Pop in the oven and bake until bubbling. Serve with a fresh tomato and spring onion salsa. #ODDRECIPES #broccoli #sustainableeating
