Any root vegetables (carrots, turnips, parsnips), as well as mushrooms, cabbage, cauliflower, kale, potato, spinach & other leafy greens! Play around with the veggies, but if you're adding potatoes cook for 10 minutes first. Prep time: 20 mins Cooking time: 35 mins INGREDIENTS: *250g celery *150g carrot *150g cauliflower *Handful of kale *50g butter *2 garlic cloves *50g flour *500ml milk of choice *50g cheddar *100g plain flour *40g ground almonds *100g butter *1 pinch sea salt *30g oats RECIPE: 1) Prep the vegetables: Chop all the vegetables to a similar bite size, then add the carrots and cauliflower florets to a pan of boiling water. Blanch for 3 minutes, until just tender, then drain and add to a bowl with the celery and kale. Season with olive oil, salt and pepper, mix well and distribute between your ovenproof dishes. 2) Make the white sauce: Preheat the oven to 180C. In a saucepan, melt the butter then add the garlic and cook for 1 minute. Add the flour & stir continuously until a paste forms. Continue cooking for 2 minutes. Gradually pour the milk in, stirring as you go until you get a smooth sauce. Add the cheddar cheese. Cook for 3 minutes, stirring continuously, until the sauce has thickened. Season to taste and pour over the vegetables. 3) Make the crumble: Cube the butter and place in a mixing bowl with the flour, ground almond, oats and sea salt. Rub together with your fingertips until it resembles big breadcrumbs. Sprinkle over the vegetables, without pushing down to the sauce. Bake for 35-40 minutes, or until golden and crisp. Can I freeze it?❄️ Whether baked or unbaked you can freeze your vegetable crumble easily. If baked, allow to cool completely before wrapping in freezer-safe packaging & freezing for up to 2-3 months, after which thaw in the fridge overnight and bake per the instructions above. *Entries to be submitted by 12:00, 20th Nov. #ODDBOXCREATIONS
