No kale? 🥬
Why not whip up a colourful pasta dough by adding roast beetroot puree or roasted carrots to your dough mixture instead!
Prep time: 1 hr
Cooking time: 20 mins.
INGREDIENTS:
Pasta Dough:
*250g of 00 flour
*1 egg
*Approx 80g of kale, stripped from stalks (we'll use them later)
Pasta Sauce:
*Large handful of kale, stripped
*Large handful of spinach
*2 cloves of garlic, sliced
*50 ml olive oil
*50g of grated hard Italian cheese
*50g of breadcrumbs (you can whizz up your leftover stale bread!)
*1 pinch of chilli flakes
RECIPE:
1) Make the pasta dough:
- Blanch the stripped kale leaves in boiling hot water for a couple of minutes. Run under cold water and blitz with the egg. Make a well in your flour and add the kale/egg mixture and then slowly start to bring the mixture together. Once it has formed a ball, knead for 15 mins until smooth and bouncy. Wrap and place in the fridge for at least 30 mins.
- Remove the pasta from the fridge and cut into thirds. Run the pasta through the machine to about a thickness of 2mm (or around 6 on the settings). Cut into thick ribbons and coat the pasta in flour to avoid sticking!
2) Make the sauce:
For the sauce, cook the kale stalks in boiling water for a couple of mins until tender. Then add the rest of the leaves for a further minute. Drain and blitz in a food processor with the olive oil, garlic, cheese and approx. 50ml of the water from boiling the kale.
3) Make the breadcrumbs:
In a separate pan, add a teaspoon of olive oil, chilli flakes and your breadcrumbs. Toast until golden.
4) Put it all together!
Add your pasta to salted boiling water and cook for 1-2 mins maximum. Bring your sauce to a simmer, adding a little pasta water to loosen it. Add the cooked pasta, ensuring the sauce coats it well. Finish with your crunchy chilli breadcrumbs and a little extra cheese for good measure.
Can I freeze it? ❄️
Raw dough also freezes well - just defrost at room temp!
