You can substitute the beetroot with carrot. Follow the same process; boil and puree the carrot until smooth, then add to your pasta dough. You can keep the skin. For the stuffing, you can use kale or choy sum instead of the spinach. Prep time: 45 minutes Cooking time: 4 minutes INGREDIENTS: *300g pasta flour (type 00)  *2 medium eggs  *1 pinch of salt  *2 small beetroot  *100g fresh goat cheese  *100g spinach  *30g walnuts *Olive oil  *Salt & pepper  RECIPE: 1) Make the beetroot puree: Cook the beetroots in boiling water for about 40 minutes, or until easily pierced with a fork. Drain and let cool. Purée until smooth - add a splash of water if needed.  2) For the pasta dough: In a bowl, add the flour and salt. Mix and make a well in the middle. Add the eggs (compost the egg shells) and 3 tablespoons of beetroot puree in the well. With a fork, combine the eggs and beetroot puree & gradually bring in the flour until you form a messy dough. Use your hands to press  the dough together and knead on a clean surface for a couple of minutes until smooth and firm. Wrap and set aside for 15 minutes. 3) Make the filling: Steam the spinach inc. stalks for 3 minutes until wilted. Drain, let cool a little and use your hands to squeeze any moisture out. Roughly chop the spinach and place in a bowl along with fresh goat cheese and chopped walnuts. Season. 4) Make the raviolis: Flour a clean surface and roll out the dough until thin enough that you almost can see through. Cut in half lengthwise. Place little dollops of the filling all over the first pasta sheet. Gently place the second pasta sheet on top. Use your fingers to push all the air out and close the two sheets together. Now use a ravioli cutter or a knife to make the shapes of your choice. Let them dry for about 10 minutes, then cook in a large pan of boiling salted water for 3-4 minutes.
