Prep time: 10 mins Cooking time: 20 mins Makes approx. 2 small jars Ingredients: *1 aubergine, cut into wedges *2 shallots sliced *Β½ green chilli (deseeded) *2 garlic cloves sliced *1 thumb sized piece of Ginger *150g Brown sugar *140ml Cider vinegar Curry paste: *1 tsp of mustard seeds *1 shallot *2 garlic cloves *1 tbsp garam masala *1 tsp Cumin seeds *1 tsp ground coriander *1 tsp Curry powder *2 dried chilli *50ml of oil. Recipe: Prep: - Slice your aubergine into wedges and put into a colander. Salt generously. Blend: - In a food processor or blender, whizz the ingredients for the spice with about 50ml of oil to form a smooth paste. Loosen with a little water if needed. Cook: - Slice the shallots, garlic and peel the ginger. Definitely do not throw those ginger peels away – pop them in the freezer! In pan, heat a tbsp of oil and fry off the shallot, garlic and ginger, sliced chill on a low heat. - Add the spice paste and cook for a couple of minutes so the spices release their oils and you start to cook off the raw spices. Then add the drained aubergine and cook for 5 mins on a high heat. Add a splash of water to help them soften. - Take the pan off the heat for a moment and add your brown sugar and cider vinegar. Simmer for approximately 15mins until the aubergine has cooked through. Avoid moving them around too much; you want them to keep their shape. How long will it last? 🌱 If putting into jars, ensure they are properly sterilized. Jar the pickle up when hot, and leave to cool in the jars…or serve straight away! This pickle keeps well and lasts up to 3 months if stored properly. Served best along side fluffy homemade naans, rice or a garlicky daal. #ODDBOXCREATIONS #auberginerecipes
