Mango Jalousie Tart 🥭👩‍🍳 Try this simple & delicious French mango tart created by our wonderful guest chef Camille @callherchef. "In French, "jalousie" means jealousy. This tart is named after its slatted puff-pastry top, that allows the mango filling to peek through, reminiscent of jalousie shutters". Ingredients: ● 1 pre-rolled puff pastry ● 3 mangoes ● 2 tbsp honey ● 1 lime, juiced ● 2 cardamom pods ● 5 tbsp water ● 1 egg yolk ● 1 tbsp milk of choice ● 1 tbsp coconut sugar Method: 1) Prepare the filling: Prepare and dice the mangoes. Compost the peels and seeds. Add the mangoes to a saucepan along with the honey, cardamom pods and water. Stir and bring to a low simmer. Cover the pan with a lid and cook over low/medium heat for about 30-40 minutes, or until soft and mushy. If the mango starts to stick to the bottom of the pan add a splash of water. Turn off the heat, add the lime juice and stir to combine. Remove the cardamom pods, and use a hand mixer to blend about half of the mango mixture until smooth. Not all the filling has to be smooth, it is nice to keep a little texture. 2) Fill up the pastry: Unroll the puff pastry and cut it in half down the middle. Use a rolling pin to roll the pastry a little bit more to get two rectangles. Transfer the first rectangle onto a parchment lined baking sheet. Spoon the mango filling in the middle, leaving a 2 cm border all around. In a small bowl, whisk together the egg yolk and milk, and brush some all around the border of the dough rectangle. Fold the other rectangle in half, along the long side and cut long slits, at 2 cm intervals along the length of the fold - but not all the way through to the unfolded edge. Carefully place it on top of the other dough rectangle with the filing. Unfold and use a fork to pinch together the edges of the two rectangles to seal it. Brush the rest of the egg wash all over the top and sprinkle with the coconut sugar. 3) Bake the tart: Preheat the oven to 180C. While the oven is heating up, chill the tart for 15 minutes in the fridge. Then bake for 20-30 minutes, or until puffed and golden.
