Spiced Swede Pasties 🥙👩🍳

Makes approx. 6-8 large pasties (depending on size!)

Cooking time: 45 mins
Ingredients:
*375g Plain flour
*190g unsalted butter
*150g of cold water
*1 tbsp ground turmeric
*Pinch of salt
For the filling:
*400g swede peeled diced into cubes (don't forget to make a scraps stock with your peels!)
*300g potato diced into cubes
*1 onion diced
*2 tbsp of curry powder
*1 tbsp of garam masala
*1 tbsp of garlic powder
*1 tbsp turmeric
*1 large tsp of marmite (or vegetable stock)
*10g of fresh coriander, roughly chopped
Salt and pepper
Recipe:
1) Tip the flour into a bowl with pinch of salt, turmeric and then rub in the butter until all combined. Pour in the water and bring everything together. Wrap in cling film and chill in the fridge for an hour.
2) Make the filling by adding all your diced veggies to a large pan with the spices and marmite and a glug of olive oil. It might take between 15-20 mins for the vegetables to completely soften – add some water to help it on its way. Once done, season and add chopped roughly coriander and leave to cool.
3) Preheat your oven to 180. Roll out the pastry to about 3mm thick. Take a medium sized plate and cut around the edges so you have a circle. Place the filling on one side of the circle, allowing for a cm or so around the edge. Fold over the other side and crimp. If you are going to freeze, pop on a baking tray and freeze now.
4) Place on a lined baking tray and brush with egg. Make an incision on the top so that steam can escape. Bake for 25-30 minutes or until they have turned golden brown and the pastry is cooked. Serve with a little more fresh coriander and lime pickle or mango chutney.
