How to store, prep, and cook your swede this week 🌱
⏲️ Storing:
Store in a cool place out of direct sunlight. Swedes will keep for a long time out of the fridge.
🔪 Preparing:
Simply top and tail the swede and peel (these makes delicious crisps when roasted!). Roast whole, or cut into chunks, fry or boil according to your recipe!
👩🍳 4 delicious recipe ideas (other than yesterday's curried pasties!)
1) ROAST: Slather a whole swede with honey, mustard and olive oil and wrap tightly. Roast slowly in the oven for a good couple of hours, removing the foil for the last 10 mins to caramelize. Slice thickly and serve with a refreshing and herby salad and a dollop of wholegrain mustard.
2) TOSTADAS: Swede is great at taking on flavour so roast chunks of the veg off in chipotle chilli, coriander and cumin and serve on crispy tostadas, avocado and maybe even a fried egg! Great as a brunch dish or as part of a Mexican feast.
3) GNOCCHI: Cut the swede into chunks and roast with a large potato until completely soft. Blitz in the food processor with some 00 flour, a handful of Italian hard cheese and a pinch of salt. Once it has formed a sticky dough, flour your surface and roll into a long sausage shape, and cut into 1cm pieces. Cook in boiling salted water and serve with in a sage and butter sauce.
4) THAI SALAD: Trim and peel the swede and using a peeler, cut into ribbons. Do the same with a carrot and combine with spring onions, sliced red chilli, plenty of coriander and some slices of red onion. Make a dressing with lime juice, rice
vinegar, sesame oil and a dash of light soy. Toss all the ingredients together with the dressing and serve along side delicious crispy tofu and rice.
