Angelo Motta were the first to produce their version of panettone on a large scale in 1919. They revolutionised the traditional panettone by giving it its, now iconic, tall domed shape. They left the dough to rise three times, for almost 20 hours, giving it its classic light as-a-cloud texture ☁️
Their traditional panettone contained candied orange, citron, lemon zest and raisins, a now-familiar combination, but modern panettone brands have introduced flavours likes pistachio, limoncello and chocolate.
