Momos, as most of us know, are popular street dumplings that are served either steamed or fried, with a spicy chilli sauce. I realised that I'd never heard of anyone attempting to make raw vegan momos so here's my take on this beautiful dish!!

The delicate wrappers are made from coconut pulp, and stuffed with a crunchy filling of vegetables and herbs. There's a spicy kimchi sauce, a mildly sweet almond butter tamarind sauce, a savoury chilli oil, and a side of kimchi. Flavour balancing was the key to this dish being a success - and man it had ALL the flavours and textures of our classic momos. So happy to make a healthier version of this.
