Lemon Aspen (Acronychia Acidula) is native to the rain forests of Northern Queensland, usually regrowing in areas that have experienced a habitat disruption. The tree can grow up to 15 metres tall and produces a small, round and yellow fruit.
๐ Lemon Aspen has traditionally been used as a bush fruit but has now gained the attention from international chefs and experimental restaurants.
๐ The fruitโs flavour is lemony citrus with a hint of grapefruit and has been used popularly in sauces, soda, and sweets.
๐ The citrus flavour makes this fruit a delicious addition to seafood dishes such as scallops and marron and adds some character to the traditional gin and tonic.
๐ The fruit contains high levels of antioxidants.
๐ The translation from its Latin species name is โslightly acidโ
