In order for the Oleogelation process to convert the factory grease you have to hit and hold a narrow temperature range right around 125ºC. It's why our system has a PID controller rather than a thermostatic controller (like a crock pot) which regulates heat with a basic all the way on or all the way off heat regulation method. This leads to cycle of over shooting then under heating until the heating element kicks back on.
