We’ve received a lot of questions regarding DMS levels when boiling with the steam condenser lid on. It’s a subject we were interested in, as well. That’s why we enlisted UW-Milwaukee’s chemistry department to assist with our third party testing during development of the steam condenser lid. Over numerous brew days, we tested DMS levels using a standard, open boil kettle, a boil kettle with a calandria, and one with a steam condenser. After weighing the three possible designs we decided a boil kettle with a steam condenser had the most upside due to the 50% lower boil off and not needing expensive brewery ventilation installed. After many different design iterations, we were able to reduce DMS to an acceptable level with the steam condensing lid on. We learned a ton! This process is a testament to the lengths our R&D team goes to in order to perfect our products before they are launched to the public. We recommend you ask other manufacturers if they performed third-party testing to prove their designs aren’t just based on form but more importantly, focused on function.
