ᴛʜᴇ ʙʀᴇᴡᴇʀ
-I joined the Air Force (now Space Force) in 2017 and my first assignment was in Colorado Springs. The area is filled with so many great craft breweries, it made me want to try brewing myself. I started brewing extract kits in 2017. In 2020 I made the leap and got the Spike Solo so I could get into all grain.
-Don’t get discouraged over a bad batch. I make bad beer all the time! It is a lot of trial and error. Luckily there are a ton of people in the community that are happy to help. Your good batches are that much better when you learn from your mistakes and trust the process!

-I like to incorporate my hometown into beer names. Matlack is a reference to one of the streets that runs through town.
- Perfection is never the goal. It’s about consistency and improvement. I’m on my third iteration of this recipe and it's getting better and better.
ᴛʜᴇ ᴡʜʏ
-There is a brewery right near my house that really got me interested in craft beer. They have an award winning Scottish ale so I just tried to mimic theirs on my first attempt (emphasis on "tried"). Since then, I've just substituted ingredients based on preference or pure curiosity.
-On this last batch I did a 5 week fermentation all in the solo. I added the Nibs at week 4 so they sat for a week before I kegged it.
-The warm, rich dark color comes from the amount of chocolate malt added.
