CHAMOMILE-WATERMELON COLLINS

60ml chamomile-infused gin (see note)
30ml lemon juice
30ml watermelon juice
1-2 tbsp simple syrup (to taste)
Soda water

Combine gin, juices and simple syrup in a ice-filled cocktail shaker, shake well. Add a dash of soda water to the shaker and then strain into a tall glass filled with ice. Option: garnish with fresh watermelon.

Note: To create infused gin, combine 6 tsp of our Chamomile Blossoms tea and 150mL of your favourite gin in a jar. Place in the fridge and allow to infuse overnight. Strain before use.
